Walnut Meringue Pie
Yield: Makes 8 servings
Ingredients

egg whites, room temperature

1/4 |
teaspoon |
salt
|
|
1/2 |
teaspoon |
baking powder
|
|
1 |
cup |
granulated sugar
|
|
1 |
teaspoon |
vanilla extract
|
|
2/3 |
cup |
broken walnuts
|
|
20 |
|
Ritz Crackers, broken in fourths
|
|
4 |
cups |
cut-up fresh fruits in season, or canned, very well-drained
|
|
1/2 |
cup |
heavy cream, whipped, unsweetened
|
|
Directions:
Beat egg whites until soft peaks form. Add salt and baking powder. Gradually beat in sugar; continue beating until stiff and glossy. Add vanilla extract. Lightly fold in next two ingredients. Spread mixture over bottom and sides of well-greased pie plate. Build up sides. Bake in preheated slow oven ( 325 F. ) 25 to 30 minutes. Cool completely on wire rack. Just before serving, fill center with fruit. Serve cream separately.
